Instructions

    1.
    Preheat an oven to 375 degrees and spray a baking dish with pan spray. Prepare the cheese filling by combining the ricotta cheese and chopped spinach together in a bowl.
    2.
    In a small bowl, whisk together an egg. On a plate, combine the parmesan and almond flour with a fork.
    3.
    Prepare 2, 8-oz chicken breasts by butterflying them and then patting them dry with a paper towel. Sprinkle the salt, pepper, onion, and basil across the inside of the chicken breasts.
    4.
    Spread the ricotta filling from Step 1 across the inside of the chicken breasts. Then, roll each breast into a tight roll, tucking the ends on the underside to avoid unrolling.
    5.
    Dip each breast into the egg, letting any excess drip off, then roll it in the parmesan breading mixture. Make sure all parts of the chicken are covered in the breading, including the openings that expose the ricotta filling. Place each breaded roll in the baking dish.
    6.
    Bake the chicken rolls for 60 minutes. Then, spread 1 TB of marinara on the top of each breast followed by about 1/8 c. of mozzarella. Bake for an additional 10 minutes or until the cheese is golden and melted.
