Instructions

    Preheat the oven to 400 F. Combine the seasoning for the outside of the pork shoulder. The seasonings include cayenne pepper, smoked paprika, minced dried onion, garlic powder, and kosher salt.

    Sprinkle the paprika mixture over the pork on all sides and press in to stick. Be sure to place the shoulder on a parchment or foil-lined baking sheet.

    Roast for 45 minutes to one hour until the shoulder has achieved a nice color on the outside.

    Then turn the heat down to 300 F and allow the shoulder to roast for at least 8 hours. The meat should pull off very easily with a pair of tongs or fork. While the pork is out of the oven and cooling, make the chipotle-lemon mayo by combining the remaining ingredients.

    Remove the pork from the oven and shred the meat, removing any bones in the center. Serve immediately.
