Instructions

    1.
    Lay 2 thin sliced center cut pork chops on a flat surface and season with the pepper, paprika, mustard powder, and garlic powder.
    2.
    Wrap 2 slices of bacon around each pork chop, tucking the loose ends under the chops or under and overlapping piece of bacon.
    3.
    Heat the olive oil in a wide pan over medium high heat. Lay the pork chops in the oil and cook for approx. 5 minutes on both sides. Simply cook until the outer bacon has crispy golden brown edges.
    4.
    When the pork chops are done, make the Polish gravy. Melt the butter in a small pan and toast the onion powder in it over low heat for about 30 seconds.
    5.
    Whisk the cream into the butter with the remaining seasonings. Bring to a simmer.
    6.
    Reduce the heat of the cream so it’s just lightly bubbling, not simmering. Whisk the cheese into the cream until melted to complete the gravy.
    7.
    For each serving, ladle about 2 TB of gravy on a plate and set a pork chop in the center. Drizzle a small amount of gravy over the pork chop. Garnish with additional dill or parsley.
