Instructions

    1.

    Heat olive oil in a pan on medium-high heat. Sear the seasoned side of the filet mignons down for about 5 minutes until charred. Rotate the steaks to sear the bacon strips.

    Place the steaks on their final raw side to cook. Reduce the heat slightly and cover the pan. Cook for an additional 5 minutes. Rotate the steaks to cook to desired doneness.
    6.
    Arrange approx. 2.5 oz of whipped blue cheese on each plate and add a finished steak. Garnish with chopped parsley.
