Imagine a confection that dances on the palate, a symphony of textures and tastes that awaken the senses. This chocolate bark is just that – a delightful combination of smooth, rich chocolate, the satisfying crunch of candied pecans, and the salty, savory notes of crisp bacon. The deep, comforting flavor of the chocolate forms the foundation, its sweetness perfectly balanced by the other ingredients.

Each bite offers a contrast of experiences. The chocolate melts luxuriously in your mouth, coating your tongue with its velvety smoothness. Then comes the delightful snap of the candied pecans, their sugary coating giving way to the nutty, earthy flavor within.

The pecans offer a textural counterpoint to the smooth chocolate, adding a welcome crunch that keeps each bite interesting. And finally, the savory bacon enters the equation, its salty, smoky flavor cutting through the sweetness of the chocolate and pecans. The bacon adds a depth of flavor that elevates this bark beyond a simple chocolate treat.

Instructions

    1.
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with foil and arrange the bacon slices in a single layer. Bake for 18-20 minutes, or until the bacon is crispy. Remove from the oven and let cool.
    2.
Break the chocolate into a heatproof bowl. Melt the chocolate using a double boiler method (over simmering water) or in the microwave in 30-second intervals, stirring in between, until smooth. Once melted, stir in one tablespoon of Lakanto syrup and the salt.
    3.
Roughly chop the pecans. In a dry pan, combine the chopped pecans with the remaining Lakanto syrup. Stir to coat the nuts evenly. Turn the heat to low and toast the nuts for 2-3 minutes, or until fragrant and lightly caramelized. Set aside to cool.
    4.
Once the pecans have cooled, stir them into the melted chocolate. Line a small, shallow tray with parchment paper. Spoon the chocolate mixture evenly into the tray, spreading it to about 1 cm (approximately 1/2 inch) thick. Roughly chop the crispy bacon and scatter it over the chocolate. Gently press the bacon into the chocolate to help it adhere.
    5.
Transfer the tray to the refrigerator and chill for 30 minutes, or until the chocolate is firm. Break the bark into 8 pieces to serve.
