Instructions

    Combine shredded coleslaw mix with rice vinegar, salt, pepper, and chopped green onion in a bowl. Toss well to combine and set aside to marinate while preparing the pork chops.

    Season one side of the thin-sliced (2-oz) pork chops with pepper, chili powder, onion powder, lemon pepper, and half of the sesame seeds. If your lemon pepper seasoning does not include salt, add a pinch of salt to each pork chop.

    Heat olive oil in a pan over medium-high heat. Place the pork chops seasoned-side down into the hot oil and sprinkle the remaining sesame seeds over the exposed side.

    Cover the pan with a lid and cook the pork chops for approximately 4 minutes per side, or until the seasoned side is crisp, golden to dark brown. Reduce the heat when flipping to prevent burning.

    Remove the cooked pork chops from the pan and set aside to rest. Return the pan with any excess juices to the stove over medium heat. Add the slaw mix to the pan to absorb the leftover spices and cook for about 5 minutes, until golden brown and excess moisture has evaporated.
