Instructions

    1.
    Roughly dice the chicken thighs into small chunks and add to a mixing bowl. Finely chop the cilantro, scallion and chilli, mince the garlic and grate the ginger. Add to the bowl along with the chicken.

    Add the lakanto syrup, sesame oil, lime juice and tamari sauce and mix together well to combine. Cover and refrigerate for 20 minutes to marinade.

    Whilst the chicken is marinating, cover 4 wooden skewers in water and soak for 20 minutes to prevent burning.

    Preheat the oven to 400 degrees Fahrenheit and line an oven tray with baking paper.
    5.
    Remove the chicken from the fridge and the skewers from the water. Thread the marinated chicken onto the skewers, dividing evenly between the four.
    6.
    Arrange the skewers on the lined oven tray and bake for 20 minutes, turning halfway through or until the chicken is completely cooked through and no longer pink.
