    Cut off the top, stem, and any brown tips from a medium artichoke (or 2 small ones). Use a serrated knife and kitchen scissors for easier cutting.

    Place the artichoke in a steam basket over a pot of water. Cover and bring to a boil. Steam for 25 minutes.

    Let the artichokes cool slightly. Preheat the oven to 350 degrees. Chop the jalapeno and grape tomatoes.

    Remove the leaves from the cooled artichoke. Arrange them on a sheet tray like nacho chips. Sprinkle with salt, pepper, cumin, onion powder, paprika, and crushed red pepper.

    Top the artichoke leaves with jalapeno, tomatoes, shredded lettuce, and cheese, covering most of the surface to prevent hard edges during baking.

    Bake for 15-20 minutes, until the artichokes are done to your liking. Bake for less time if you want to use them as scoops, or longer for firmer nachos.
