Description

Imagine biting into a dessert that carries the comforting essence of autumn, even when the season is far away. This unique creation transforms a humble vegetable into a sweet indulgence, a delightful surprise for the palate. The chayote, often overlooked, reveals its hidden potential as it mimics the tender texture of cooked apples.

Each spoonful offers a symphony of familiar flavors. Warm spices, reminiscent of apple pie, gently embrace the subtle sweetness of the chayote. Cinnamon, with its inviting aroma, dances alongside the gentle warmth of nutmeg and the faintest hint of cloves.

These spices intertwine, creating a comforting and nostalgic experience that evokes memories of cozy kitchens and holiday gatherings. The texture is key to the magic of this dessert. The chayote, when cooked to perfection, yields a soft, slightly yielding bite, much like a perfectly baked apple.

It's tender without being mushy, holding its shape while releasing a burst of gentle flavor. The spices cling to each morsel, ensuring that every bite is filled with warmth and satisfaction. The overall effect is a harmonious blend of textures and tastes that will leave you wanting more.

This dessert is more than just a clever substitute; it's a celebration of culinary creativity. It showcases how simple ingredients, when treated with imagination and care, can be transformed into something truly special. It’s a testament to the idea that deliciousness can be found in unexpected places, and that sometimes, the most surprising creations are the most rewarding.

It's perfect as a light after-dinner treat, a comforting snack on a chilly evening, or even a unique addition to a brunch spread. Its subtle sweetness and warm spices make it a versatile dessert that can be enjoyed any time of day.

Instructions

    1.
Preheat an oven to 350 F. Combine almond flour, coconut flour, Pyure, cinnamon, kosher salt and 2 T diced butter in a small bowl. Using your fingers, work butter into the flour so it is combined yet still has small lumps of butter in it.

Peel, core and dice chayote into ¼” cubes.
    3.
Toss it with 2 T Pyure, cinnamon, allspice and lemon juice.
    4.
Take two small ramekins and divide the chayote between the two bowls. Then follow with dividing the crumb topping.
    5.
Bake for 30-35 minutes until the top is browned.
    6.
    Served with whipped cream!
