Description

Delight in the simple elegance of these homemade pinwheel cookies, a treat that combines visual appeal with a delicate, nuanced flavor. The recipe begins with a dough reminiscent of almond paste, crafted from scratch to ensure a fresh, vibrant taste. This dough is then divided, offering a delightful contrast in both color and flavor.

One portion remains a pure, sweet almond, its subtle nutty notes forming the base of our pinwheel. The other half is transformed with the addition of rich, dark cocoa powder, lending a deep, chocolatey counterpoint to the almond's sweetness. The beauty of these cookies lies in their construction.

Each dough, almond and chocolate, is rolled incredibly thin, almost paper-like in its delicacy. These thin sheets are then carefully layered one on top of the other, creating a striking contrast of light and dark. This layered stack is then meticulously rolled into a tight log, much like preparing a rolled cake.

The magic truly happens when the log is sliced. Each slice reveals the intricate spiral of almond and chocolate, transforming simple dough into captivating pinwheels. Arranged on a baking sheet, these cookies are a feast for the eyes even before they enter the oven.

Baking time is key to achieving your desired texture. For a softer, more yielding cookie, bake until just set and lightly golden. Alternatively, extend the baking time slightly to achieve a delightful shortbread-like texture, crumbly and crisp, that melts in your mouth.

The aroma that fills your kitchen as these bake is simply intoxicating, a blend of sweet almond and deep cocoa that promises a truly special treat. These pinwheel cookies are perfect for afternoon tea, a delightful addition to a holiday cookie platter, or simply a sweet indulgence to brighten any day. Their charming appearance and delicious flavor are sure to impress and delight, making them a memorable treat for both baker and those lucky enough to enjoy them.

Instructions

    1.
In a food processor, combine the almond flour, olive oil, sweetener, salt, and baking soda. Process until a paste forms.
    2.
Add the egg and vanilla. Process well until a paste forms.
    3.
Divide into two parts and leave half of the dough in the food processor. Add 1 tbsp cocoa to the dough in the food processor and process briefly.
    4.
Between two pieces of parchment paper, roll the plain dough into a square about 8” x 8”. Repeat with the chocolate dough.
    5.
Remove one piece of parchment from each rolled dough. Place one on top of the other and remove another piece of parchment leaving one parchment under the bottom of the dough.
    6.
Roll the dough as tightly as possible. Freeze until firm, but not too hard (just firm enough that you can cut with a knife without smashing the cookies).
    7.
    Cut into ⅓” - ½” thickness.
    8.
Preheat an oven to 350 F. Place cookies on a baking sheet and bake for 7 minutes for soft cookies upwards to 10 minutes for a shortbread-like cookie.
