Description

These delicate, petite cakes are a lovely treat to accompany a morning coffee or to savor as a comforting end to the day. Inspired by classic French confectionery, these little bites offer a moist, airy crumb and a delightful hint of almond. The edges bake to a beautiful golden brown, providing a subtle crispness that contrasts beautifully with the soft interior.

Crafting these charming cakes is surprisingly straightforward, requiring just a handful of simple ingredients. The batter comes together quickly, and the cakes bake to perfection in a matter of minutes. The absence of wheat flour lends a unique texture, allowing the almond flavor to truly shine.

A touch of sweetener enhances the natural nuttiness, creating a perfectly balanced sweetness. For those who adore the flavor of almonds, a tiny drop of almond extract can deepen the overall taste profile. However, the cakes are equally delicious with a hint of lemon or butter extract, each adding its own distinctive nuance.

The key is to use a light hand, allowing the primary almond flavor to remain the star. These cakes are particularly enjoyable alongside a rich, creamy coffee, where their delicate sweetness provides a counterpoint to the coffee's robust flavor. To preserve their optimal texture, these cakes are best enjoyed fresh.

If storing, wrap them individually in plastic wrap and refrigerate them. However, be sure to enjoy them within a couple of days to prevent them from drying out. These little almond cakes are a delightful indulgence, perfect for sharing with friends or simply enjoying as a moment of personal pleasure.

Instructions

    1.
Preheat your oven to 350°F (180°C). In a stand mixer, whip the egg whites until they become opaque white and foamy. Gradually add the powdered erythritol and vanilla extract, continuing to whip until medium-stiff peaks form.
    2.
Ensure your almond flour is sifted to avoid clumps. Gradually whip the almond flour into the egg whites in 2-3 additions, being careful not to deflate the mixture. Gently melt the butter, then slowly pour it into the batter while continuing to whip.
    3.
Silicone molds are recommended, but a muffin tray can also be used. Transfer the batter to a piping bag or a Ziploc bag with a corner cut off. Pipe the batter into your cake molds, using approximately 2 tablespoons per cake.
    4.
Sprinkle approximately ¼ teaspoon of sliced almonds on top of each cake. Place the filled molds or muffin tray on a baking sheet and bake for 25 minutes or until the edges are lightly golden and a toothpick inserted into the center comes out clean. Allow the cakes to cool in the molds for 5-10 minutes before removing.
