Instructions

    Slice the tomatoes in half, the pepper into thin strips and finely slice the garlic. Place a sheet of foil on a work surface large enough to create a loose parcel around the vegetables. Place the pepper strips and tomatoes halves in the center of the foil square. Add the garlic and drizzle with half a tablespoon of olive oil and season with a little salt and pepper.

    Scrunch the sides of the foil up around the vegetables to create a loose parcel, allowing enough air to circulate in the foil. Place the foil parcel in the center of the air fryer basket. The basket base should not be completely covered and the parcel should be secure and weighted down by the vegetables. Loose foil can burn and catch in the air fryer so be careful! Set the basket in the air fryer. Turn the temperature to 375 and set the timer for 25 minutes. The vegetables should be soft and tender. Set aside in the foil to keep warm.

    Whilst the vegetables are cooking you can prepare your steaks. Brush the steaks all over with olive oil and lightly oil the air fryer basket. Season the steaks well on both sides.

    Place one of the prepared steaks in the air fryer basket and set in the air fryer. Set the temperature to 375 and the timer for 10 minutes. Please adjust this cooking time to preference. Remove the cooked steak from the air fryer and allow to rest whilst you cook the remaining steak. Note - if you are cooking smaller steaks you may be able to fit them both in the air fryer at the same time to reduce cooking time. Top the steaks with the warm tomatoes and peppers. Drizzle over the garlic oil and juices from the foil parcel. Top with fresh chopped basil to serve.
