Description

Imagine flaky cod, its delicate texture yielding to the touch, infused with the bright, clean flavor of lemon. The fish, cooked to perfection whether fresh or frozen, sits atop a bed of vibrant zucchini noodles, tossed in a luscious garlic-butter sauce. The zucchini, tender yet retaining a pleasant firmness, offers a satisfying contrast to the soft cod.

Each strand glistens with savory richness, carrying the aromatic essence of garlic and the creamy smoothness of butter. The beauty of this dish lies in its simplicity. The cod, infused with lemon, offers a refreshing zest that awakens the palate.

The garlic-butter zucchini noodles provide a comforting and flavorful base, their subtle sweetness complementing the tang of the lemon. Together, they create a harmonious balance of flavors that is both satisfying and light. As you bring the fork to your mouth, the aroma of lemon, garlic, and butter mingle, enticing your senses.

The first bite is an explosion of textures: the delicate flakiness of the cod, the slight resistance of the zucchini noodles, and the smooth, coating sauce. The flavors dance on your tongue, the brightness of the lemon cutting through the richness of the butter, the garlic adding a savory depth. A final squeeze of fresh lemon juice brightens the entire dish, adding a vibrant burst of citrus that elevates the flavors even further.

A sprinkle of fresh, minced parsley adds a touch of herbaceousness, providing a refreshing counterpoint to the richness of the sauce. This is a dish that is both elegant and comforting, perfect for a weeknight meal or a special occasion. Cooking times will vary depending on the thickness of the cod and the preference for zucchini noodle tenderness.

For firmer zucchini, reduce cooking time. Reduce cooking time if using thawed cod.

Instructions

    1.
Spiralize zucchini into thin noodles. Sprinkle with ¼ tsp salt to help draw out excess moisture.
    2.
Place frozen cod in the bottom of the air fryer basket. Sprinkle with ¼ tsp kosher salt and garlic powder. Set air fryer for 400°F for 15 minutes. Place lemon slices on top of the cod during the last 3 minutes of cooking until the fish reaches an internal temperature of 145°F.
    3.
Remove the fish and air fryer tray, replacing it with a clean tray. Add the zucchini noodles and cook for 1-2 minutes at 400°F, until tender-crisp.
    4.
Melt butter and minced garlic cloves together in a small saucepan or microwave until fragrant.
    5.
Pour the melted garlic butter over the zucchini noodles and toss well to combine, ensuring the noodles are evenly coated.
    6.
Serve the hot cod on top of the garlic-butter zucchini noodles. Finish with a fresh squeeze of lemon juice and a sprinkle of minced parsley for added flavor and freshness.
