Instructions

    Add the ground almonds, erythritol, coconut flour, desiccated coconut, baking soda and salt to a large mixing bowl. Stir everything together well to combine.

    Melt the coconut oil and add to the bowl. Add the lime juice. Mix together well to combine.

    Crack the eggs into the bowl. Beat the mixture together until well combined. You should have a thick but smooth batter.

    Divide the batter evenly between 10 silicon muffin cases suitable for an air fryer. Arrange half the filled muffin cases in your air fryer basket. Set the basket in the air fryer.

    Set the temperature to 300 degrees Fahrenheit and set the timer for 15 minutes. After this time, check the muffins are golden and cooked through. A toothpick should come out clean from the center. Cook a few minutes longer if required. Set the cooked muffins aside to cool completely whilst you bake the remaining batch.
