Description

Imagine a plate of glistening noodles, each strand coated in a savory sauce that sings with the brightness of orange and the umami depth of toasted sesame. This dish centers around translucent noodles, known for their delicate texture and remarkable ability to absorb flavors. These unique noodles, crafted from the konjac root, offer a delightful alternative to traditional pasta, providing a satisfying chewiness without the heaviness.

The star of the sauce is a harmonious blend of rich, fermented soy notes, the zing of fresh orange zest, and the subtle warmth of toasted sesame oil. It's a sauce that clings beautifully to the noodles, ensuring every bite is an explosion of flavor. Paired with the noodles are succulent slices of duck breast, seasoned with a fragrant five-spice blend.

The duck, with its crispy skin and tender meat, provides a counterpoint to the lightness of the noodles, creating a symphony of textures and tastes. The aromatic spices infuse the duck with a warm, inviting fragrance that complements the citrusy notes of the sauce. This dish is surprisingly quick to prepare, making it perfect for a weeknight meal.

The noodles require minimal cooking time, and the sauce comes together in minutes. Whether you're looking for a lighter alternative to traditional pasta dishes or simply seeking a flavorful and satisfying meal, this noodle creation is sure to delight. For those seeking even more variety, feel free to experiment with other vegetable-based noodle alternatives, such as finely shredded cabbage, zucchini ribbons, or spaghetti squash.

Each option offers a unique texture and flavor profile that can be tailored to your preference. This dish offers a balance of flavors and textures that is both comforting and exciting. The noodles provide a neutral base that allows the sauce and duck to shine, while the overall combination is light enough to be enjoyed any time of year.

Instructions

    1.
Preheat the oven to 400 degrees Fahrenheit. Score the skin of the duck breasts. Season the duck breasts on both sides with the 5 spice, salt, and pepper. Heat a skillet over medium-high heat. Place the duck breast skin-side down in the dry skillet. Cook for 5 minutes until the skin is golden brown. Turn and cook the other side for 1 minute to seal. Transfer to an oven tray, leaving fat in the skillet. Bake for 10-12 minutes or until cooked to preference. Let rest for 5 minutes.
    2.
While the duck is cooking, drain the noodles and rinse thoroughly under cold water. Heat a separate dry skillet over medium heat. Add the noodles and cook for 6-7 minutes until hot and firm.
    3.
Thinly slice the garlic and scallion and grate the ginger. Add olive oil to the skillet used for the duck over low-medium heat. Add half the scallion, garlic, and ginger. Sweat gently for 1-2 minutes until tender and fragrant.
    4.
Add the noodles to the skillet along with orange juice, sesame oil, and tamari sauce. Stir well to coat the noodles in the sauce. Heat through briefly.
    5.
Divide the noodles between two serving bowls. Slice the duck breasts and arrange over the noodles. Scatter over the remaining scallions. Serve hot.
