Instructions

    Preheat your oven to 375 F/190 C and lightly grease a casserole dish. Slice the squash into inch (1/2 cm) slices and transfer them to a bowl. Add 1 tbsp of olive oil and toss.

    Mince the garlic and add it to the bowl. Season with salt and pepper. Toss to season evenly.

    Add the remaining oil to a skillet and place it over medium heat. Add the squash and fry for 10 minutes until softened and released a lot of its moisture. Take it off the heat, drain excess liquid, and transfer the cooked squash to the casserole.

    To a saucepan, add the heavy cream and 1 1/2 cups of cheese. Place over medium heat and cook until the cheese is melted and smooth, whisking constantly. Take off the heat and season with salt and pepper to taste.
