Description

Imagine starting your day with a comforting and flavorful breakfast casserole that's as satisfying as it is simple. This hash brown breakfast casserole is a delightful combination of textures and tastes, offering a rich and creamy experience with every bite. The heart of this casserole lies in the subtly earthy flavor of celeriac, the root of celery, which provides a satisfyingly starchy base reminiscent of potatoes, but with its own unique character.

You could also use parsnip, kohlrabi, or even the often-discarded stalks of cauliflower to achieve a similar effect. The beauty of this dish lies in its versatility. A medley of cheeses, such as white cheddar, mozzarella, parmesan, and gouda, melts together to create a gooey, golden topping that adds depth and complexity.

Feel free to experiment with your favorite cheeses, or even explore vegan alternatives. For a heartier casserole, crispy bacon adds a smoky, savory element that perfectly complements the other flavors. However, you can easily adapt this recipe to your preferences by substituting breakfast sausage, Italian sausage, or even mushrooms for a meat-free option.

What truly sets this breakfast casserole apart is its convenience. It can be assembled ahead of time, making it an ideal solution for busy mornings. Simply prepare all the ingredients, except for the eggs, and store them in the refrigerator for a few days.

When you're ready to bake, whisk in the eggs, sprinkle on the cheese, and bake until golden brown and bubbly. This casserole is also perfect for meal prepping. Prepare a batch or two and portion it into individual containers for a quick and nutritious breakfast throughout the week.

A slice of this casserole is a great alternative to processed breakfast options, providing a wholesome and protein-packed way to fuel your day.

Instructions

    1.
Preheat your oven to 180C/350F and grease an 8x10-inch (20x 25 cm) casserole pan. Peel the celeriac and grate it. Place in a clean kitchen towel, squeeze to release excess moisture, then place into a bowl.
    2.
Place a large skillet over high heat. Finely dice the bacon and add it to the skillet. Cook for 2-3 minutes, stirring constantly, until crispy. Remove 1-2 tbsp of the cooked bacon and set aside.
    3.
Add the grated celery root to the pan with the bacon. Stir for a minute just to coat everything with bacon fat. Transfer to the casserole.
    4.
Crack the eggs in a bowl. Add the heavy cream and season with salt and pepper. Whisk until combined.
    5.
Pour the eggs into the casserole with the other ingredients. Stir to distribute the mixture evenly. Sprinkle the cheese on top and top with the cooked bacon you reserved earlier.
    6.
Bake for 25-30 minutes until cooked through. If the cheese starts browning quickly, cover the casserole with aluminum foil. Take the baking dish out of the oven and let it cool for 10 minutes.
    7.
Slice the casserole into 4. You can garnish with your choice of herbs. Serve immediately.
