Description

This chicken and broccoli stir-fry is a delightful choice for a swift and satisfying meal, ideally suited for those bustling weeknights. In approximately 20 minutes, you can conjure a plate brimming with savory goodness. The preparation commences with bite-sized broccoli florets, pan-fried until they achieve a beautifully browned and slightly crisp exterior, offering a pleasant textural contrast.

Ground chicken, infused with aromatic garlic and ginger, is then cooked until it develops a rich, caramelized character and releases its fragrant essence, tantalizing the senses. The magic of this stir-fry lies in its harmonious blend of flavors, brought together by a well-balanced sauce. A medley of soy sauce alternative, a dash of sriracha for a subtle kick, a whisper of sesame oil for nutty depth, and rice vinegar for a tangy counterpoint combine to coat every morsel in delectable goodness.

Ground chicken is the star of this dish, lending a unique flavor and ease of preparation, but those who prefer can easily substitute with diced chicken breast. For a plant-based adaptation, firm tofu or plant-based protein crumbles make equally enticing alternatives, ensuring that everyone can partake in this culinary creation. Serve this vibrant stir-fry over a bed of cauliflower rice for a light and wholesome meal, or opt for crisp lettuce cups for a refreshing and low-carb presentation.

Each bite offers a symphony of textures and tastes – the tender chicken, the slightly crunchy broccoli, and the savory sauce – creating a truly memorable dining experience. This stir-fry is not just a meal; it's an adventure for your palate, a quick escape to a world of flavor, and a comforting reminder that delicious food doesn't have to be complicated.

Instructions

    1.
Heat 1 tbsp of oil in a skillet over medium heat. Chop the broccoli into small florets and add them to the pan. Let them sit untouched for 1-2 minutes to brown on the bottom, then stir and cook for 3 more minutes. Transfer to a plate.
    2.
Add the remaining oil to the skillet. Finely chop the garlic and ginger and add them to the pan. Cook for 1 minute, stirring continuously, until fragrant.
    3.
Add the ground chicken to the pan, and turn the heat up to high. Break up the meat using a wooden spoon, and cook for 5-7 minutes, stirring occasionally. Add the chili powder.
    4.
While the chicken is cooking, prepare the sauce. Add the tamari, sriracha, sesame oil, rice vinegar, and stevia to a small bowl. Whisk until combined.
    5.
Pour the sauce over the chicken. Add the cooked broccoli and stir everything together. Cook for another minute until no liquid remains.
    6.
Let the chicken and broccoli dish cool for 30 minutes. Portion it out into 4 microwave-safe containers. Thinly slice the scallion and sprinkle it over the chicken along with the sesame seeds and nigella seeds. Cover and store in the fridge for up to 4 days.
