Instructions

    Preheat your oven to 350°F (175°C). In a medium-sized mixing bowl, thoroughly combine all the dry ingredients.

    In a heatproof bowl, melt the butter in the microwave in 30-second intervals until fully melted. Stir in the vanilla extract.

    Add the melted butter mixture to the bowl with the dry ingredients. Mix lightly until just combined, then add the eggs and mix slightly again.

    Pour in the strong brewed coffee (the stronger, the better!). Ensure the coffee is warm but not too hot before adding it to the cake batter.

    Take a piece of parchment paper, cut it into a square, and fold it in half to create a triangle. Continue folding the triangle to make a thin point. Measure it against your 8-inch round, greased cake pan by placing the tip in the center of the pan.

    Cut the parchment paper along the edge of the pan to form a circle. Unfold the circle and place it in the bottom of the pan. Lightly spray the paper with cooking spray.

    Pour the cake batter into the well-greased or cooking spray-coated 8-inch round cake pan.
