Instructions

    Add the coconut flour, mozzarella, salt, xanthan gum, baking soda, and parmesan to a food processor. Finely chop the rosemary and add. Pulse everything together to combine, forming a chunky crumb.

    Add the cream cheese, butter, and vinegar. Blend to combine. The crumb should now be starting to thicken and bind a little.

    Crack the egg into the food processor. Blend well with the other ingredients. A pliable dough should now have formed in the food processor.

    Preheat the oven to 375 degrees Fahrenheit and line a shallow oven tray with baking paper. Scoop the dough out from the food processor. Divide into four even-sized portions and use your hands to roll each portion into a ball. Place each ball of dough on the prepared baking tray and press each one down just a little with your palm to create a bun shape.

    Transfer the tray to the oven and bake for 15 minutes. The rolls should be firm to the touch and golden brown all over. Set the rolls to one side to cool completely and firm further.
