Add 1 Tbsp of olive oil to a non-stick skillet, and place over high heat. Cook the chicken breasts for 2-3 minutes on each side until golden, then transfer them to a plate.

    Rest the chicken breasts for 5 minutes, chop them into 1-inch cubes, and add them to a bowl. Mix in the cream cheese, ¼ cup of shredded cheese, and ½ tsp each paprika, cumin, and oregano. Taste and adjust seasoning, set aside.
