Description

Imagine a hearty, comforting meatloaf, crafted with wholesome ingredients and bursting with savory flavor. This isn't your average meatloaf; it's a celebration of simple, natural tastes. The star of the show is the ground beef, enriched with the smoky, salty goodness of freshly made bacon bits, mixed right in.

This adds a depth of flavor and a delightful textural contrast to every slice. A carefully selected blend of seasonings complements the richness of the beef and bacon, creating a harmonious and well-balanced taste profile. The meatloaf is then lovingly brushed with a vibrant tomato sauce, providing a tangy sweetness that caramelizes beautifully during baking.

The result is a moist, tender meatloaf with a slightly crisp, flavorful crust. What sets this meatloaf apart is its commitment to whole, unprocessed ingredients. There are no grains or fillers here, just pure, unadulterated goodness.

It's a testament to the fact that you don't need complicated ingredients to create a truly satisfying dish. Alongside this comforting main course, picture a generous serving of vibrant green broccoli, lightly dressed with extra virgin olive oil. The broccoli provides a fresh, crisp counterpoint to the richness of the meatloaf, while the olive oil adds a subtle fruity note.

This meal is a celebration of simple, wholesome ingredients and classic flavors. It's a perfect choice for those seeking a satisfying and nourishing meal made with real food. Whether you're looking for a comforting weeknight dinner or a crowd-pleasing dish to share with friends and family, this meatloaf is sure to be a hit.

Its savory flavors, tender texture, and wholesome ingredients make it a dish that everyone can enjoy.

Instructions

    1.
Cook the bacon into crispy strips on your stove. Once the bacon has cooled down, mince it into bacon bits. Try to make the pieces extra small so they blend into the meatloaf better.
    2.
Turn on your oven to preheat to 400F (210 C) and spray a loaf pan with cooking spray. In a large bowl, combine ground beef with the bacon bits, ground flax, egg, chopped green onion, salt, pepper, onion powder, garlic powder, cumin, paprika, and nutmeg. Leave the meatloaf mixture aside for 5 minutes to give the flax time to thicken.
    3.
Spread the meatloaf into your prepared loaf pan. Use a toothpick to poke several holes in the top of the loaf. In a small dish, whisk together tomato sauce, brown sugar, and pinches of salt, pepper, cumin, and onion powder. Brush the sauce over the top of the meatloaf.
    4.
Cover the meatloaf with aluminum foil and bake for 45 minutes. Then, bake the meatloaf uncovered for another 30 minutes. You can use your broiler to brown the top of the meatloaf more at your discretion.
    5.
When the meatloaf is nearing the end of cooking, make the broccoli by adding thawed broccoli from frozen to a large pan on your stove. Toss the broccoli with olive oil, salt, pepper, and Italian seasoning. Cook the broccoli on high heat until the spices have browned. Cook at a lower temperature to cook the broccoli to your preferred tenderness.
    6.
Take the cooked broccoli off the stove and toss it with extra virgin olive oil. Cut the finished meatloaf into approximately 5-ounce slices. Serve hot.
