    Peel the potatoes, then cut the potatoes into 3 ½” sections. You can peel the skins onto a paper towel to crumble them up and toss them when you are done for easy clean-up. If the potatoes are large and long, you may be able to cut the potatoes in half.

    Slice each section into about ½” or slightly thicker slices. Then cut them in the other direction into ½” slices (or whatever thickness you did on the slices) to create uniform fries. Having uniform pieces is critical for the fries to cook evenly. You can even consider purchasing a fry cutter if this is a recipe you may make often and don’t have the best knife skills.

    Toss the sweet potato fries with olive oil and spices. Make sure that the spices are distributed uniformly throughout. A large bowl is best for this step.

    Divide the batch into two and cook the first half at 375 F for (190 C) for 15 mins. Repeat with the second batch. Serve immediately.
