Description

This meatloaf recipe offers a straightforward method for preparing multiple meals in advance. It features a tender, savory ground beef base, enhanced with the subtle saltiness of crushed pork rinds and the gentle bite of diced white onion. A single egg binds the ingredients, while grated garlic provides an aromatic depth, and a touch of salt balances the flavors.

The meatloaf mixture is carefully placed in the base of a pressure cooker, where it's then generously coated with a tangy and sweet topping. This glaze, a blend of tomato paste, Dijon mustard, and a hint of brown sugar substitute, creates a caramelized crust during cooking, contrasting beautifully with the moist interior. Cooking under high pressure ensures a quick and efficient process, resulting in a meatloaf that's both flavorful and incredibly tender.

The pressure cooking method traps moisture, preventing the meatloaf from drying out and allowing the flavors to meld together harmoniously. The result is a deeply satisfying and comforting dish that’s perfect for a weeknight dinner or a weekend gathering. Each slice offers a delightful combination of textures and tastes, from the slightly crisp exterior to the soft, savory center.

The aroma alone is enough to entice, promising a hearty and fulfilling meal. Consider serving this meatloaf with a creamy cauliflower mash gratin, the richness of the gratin provides a counterpoint to the savory meatloaf, creating a balanced and complete dining experience. The meatloaf can be enjoyed hot, fresh from the pressure cooker, or cooled and sliced for sandwiches or salads, offering versatility for meal planning.

Its robust flavor profile makes it a crowd-pleaser, sure to be a hit with family and friends alike. This recipe offers a delicious and convenient way to enjoy a classic comfort food with a flavorful twist.

Instructions

    1.
In a large mixing bowl, combine the lean ground beef, kosher salt, garlic clove (grated on a microplane), crushed pork rinds, and an egg. Mix together well until just combined, ensuring no residual egg is visible in the mixture.
    2.
Add the finely diced white onion and mix well again.
    3.
In a small mixing bowl, combine the ketchup, dijon mustard, and sugar sweetener until combined with no residual lumps of sweetener present. Reserve ⅓ of this mixture and set it aside for topping the meatloaf at the end of the cooking time. Place the meatloaf mixture into the bottom of an Instant Pot basket (making sure to spray the basket with nonstick cooking spray first). Form the meatloaf into the desired loaf shape.
    4.
Spread the rest of the ketchup mixture on top of the meatloaf evenly. Place the lid on the Instant Pot and turn the knob to sealed. Set the pot on high pressure for 25 minutes. Once the time has elapsed, release the pressure from the pot and allow the meatloaf to sit on the “keep warm” setting for 5-10 minutes. Very gently remove the basket from the Instant Pot and pour out any residual liquid formed during the cooking process. Tilt the basket and use a spatula to gently coax the meatloaf out from the Instant Pot onto a cutting board. Allow to cool slightly before attempting to cut the meatloaf with a sharp knife. Coat the meatloaf with the remaining ketchup mixture that was set aside previously.
    5.
After a few minutes have elapsed, slice the meatloaf into 12 slices.
