Description

These delectable wings offer a delightful twist on a classic favorite, achieving a satisfying crispness through oven baking before being generously coated in a luscious, sticky glaze inspired by Chinese flavors. Ready in under 40 minutes, they’re perfect for a quick yet impressive meal. The wings draw on the essential flavors of Asian cuisine, combining the savory depth of soy sauce with the tangy brightness of vinegar, the pungent aroma of garlic, the warm spice of ginger, and the nutty fragrance of sesame oil.

A touch of sweetness is added to balance the savory notes, creating a harmonious and well-rounded flavor profile that dances on the palate. These wings are incredibly versatile, equally enjoyable as a satisfying main course or as a flavorful component alongside other dishes. Their crisp exterior gives way to a tender and juicy interior, providing a delightful textural contrast that enhances the overall eating experience.

Eschewing traditional coatings like cornstarch or flour, the wings achieve their satisfying crispness solely through the magic of oven baking, making them a lighter and healthier alternative. Enjoy these wings on their own as a finger-licking appetizer, or pair them with complementary dishes such as garlic and chili green beans for a complete and balanced meal. For those seeking a gluten-free option, simply substitute regular soy sauce with its gluten-free counterpart, tamari, without compromising on flavor.

The key to the sauce’s irresistible stickiness lies in the use of xanthan gum. This ingredient ensures that the glaze clings beautifully to the wings, creating a glossy and flavorful coating with every bite. Start with a small amount, about half a teaspoon, and adjust as needed to achieve the perfect consistency, ensuring that each wing is generously coated in the flavorful sauce.

The result is a symphony of flavors and textures that will leave you craving more.

Instructions

    1.
Preheat your oven to 210 C/ 425 F. Line a baking sheet with aluminum foil and place a rack on top. In a bowl, toss the chicken wings with salt, pepper, and oil.
    2.
Arrange the wings on top of the rack. Transfer the baking sheet to the oven. Bake for 15 minutes.
    3.
While the wings are cooking, prepare the sticky sauce by whisking the soy sauce, vinegar, water, minced garlic, ginger, sesame oil, honey-flavored syrup, and xanthan gum in a saucepan. Place the pan over medium heat and bring to a simmer. Let the sauce thicken, then take it off the heat.
    4.
Take the baking sheet out of the oven and flip all the wings. Return to the oven and bake for another 20 minutes until cooked through. Transfer the wings to a large bowl.
    5.
Pour the sticky sauce over the chicken wings and toss. Slice the scallions and add them to the chicken. Toss again.
    6.
Transfer the wings to a large serving platter or 4 individual plates. Sprinkle with more scallions and sesame seeds. Serve immediately.
