    Toast slices of Keto bread until golden brown and crispy. Let them cool completely, then dice them into very small pieces. In a large mixing bowl, combine the diced Keto bread with ground beef, salt, pepper, garlic powder, onion powder, parsley, allspice, red pepper flakes, paprika, and cardamom. Use your hands to thoroughly mix all ingredients, massaging the meat and bread cubes until a soft and spongy kofta mixture forms.

    Set the bowl of kofta mixture aside to allow the bread to absorb moisture and the meat to rest for at least 10 minutes. While the mixture rests, prepare the tzatziki sauce. In a separate bowl, stir together Greek yogurt, tahini, lemon juice, salt, and garlic powder until a smooth, off-white sauce forms. Grate a whole seedless cucumber into fine shreds using a cheese grater until you reach the desired weight. Stir the grated cucumber into the sauce and set aside.
