    Begin by preparing the butternut squash noodles. Remove the top and peel the squash. Discard the bulbous end containing the seeds, as it's not suitable for noodles. Using a spiralizer with the fine shred attachment, create noodles from the top portion of the squash. Measure out 225g (approximately 3 cups) and set aside.

    Place the chicken breasts in the air fryer basket. In a small bowl, combine 1 bsps of olive oil, kosher salt, smoked paprika, and garlic powder. Brush this mixture generously over both sides of the chicken. Set the air fryer to 350F (175C) and cook for 15 minutes. Flip the chicken and continue cooking for another 6-7 minutes, or until the internal temperature reaches 165F (74C). Remove the chicken and let it rest on a cutting board.

    Add the butternut squash noodles to the air fryer basket. There's no need to wash the basket after cooking the chicken, as the residual flavors will enhance the noodles. Set the air fryer to 375F (190C) and cook for 3 minutes, until the noodles are al dente but cooked through. Sprinkle with a pinch of salt, then drizzle with the remaining olive oil. Toss with parmesan cheese and parsley. Slice the rested chicken breasts and serve alongside the butternut squash noodles.
